At Inserrata, in the hills of San Miniato, Tuscany, we produce organic extra virgin olive oil from our own olives, offered in two expressions: Organic Extra Virgin Olive Oil and Organic Extra Virgin Olive Oil IGP Tuscany.
The origin of Inserrata olive oil
Everything begins with our olive groves, cultivated according to certified organic farming practices. We work in harmony with nature, respecting the trees and the land, to produce an olive oil that is authentic, expressive and deeply connected to its territory.
Our olive oil is obtained from a blend of traditional Italian cultivars including Frantoiano, Leccino, Moraiolo, Pendolino, Mignola and Coratina. Each variety contributes differently to aroma, bitterness, spiciness and overall balance.

Inserrata Organic EVO IGP Tuscany follows a strict production code that certifies its geographical origin. The IGP Tuscany designation guarantees traceability and a strong link to the region.
Compared to the standard organic EVO, the IGP version is generally more harmonious and refined. Aromas recall cardoon, chard, fennel and tomato leaf, with elegant almond notes and a subtle herbal freshness. Bitterness and spiciness are present but perfectly balanced.
