Organic Olive Oil or Tuscan PGI? Differences, Pairings and Tasting

At Inserrata, we produce organic EVO oil from our own olives in San Miniato, in the Tuscan hills, and offer it in two interpretations: Organic EVO Oil and Organic Tuscan IGP EVO Oil.

What is the difference between organic olive oil and Tuscan PGI olive oil?
Organic certification concerns the farming and production method, with attention to soil, plant and environmental health. PGI certification protects the connection between a product and its place of origin through a specific production standard.
An oil can therefore be both organic and Tuscan PGI. At Inserrata, both oils come from olives grown according to organic farming principles.
Where does Inserrata olive oil come from?
Inserrata oils are made from olives grown on our farm in the hills of San Miniato, near Pisa. Climate, soil, olive varieties and harvest time all contribute to the final profile. The main cultivars are Leccino, Moraiolo, Pendolino, Frantoio, Mignola and Coratina.
How can you recognise olive oil aromas and flavours?
During a professional tasting, three main aspects are evaluated.
Aromas
We look for fresh, clean aromas such as freshly cut grass, olive leaf, artichoke, almond, green tomato and aromatic herbs.
Bitterness
Bitterness is a natural sensation in extra virgin olive oil and depends mainly on the olives used and their degree of ripeness.
Pungency
Pungency is linked to the natural compounds present in olive oil. It can be delicate or more intense and persistent. Bitterness and pungency are not defects. When balanced, they are important characteristics of a high-quality EVO oil.
Organic olive oil or PGI olive oil: which should you choose?
There is no single olive oil that is better in every situation. The choice depends on personal taste and on the dish.
It is ideal for bruschetta, legumes, soups, vegetables, salads, white fish and everyday dishes.
